Pour en manger il faut les p\u00eacher soi-m\u00eame. Et encore faut-il savoir les p\u00eacher, les pr\u00e9parer, les appr\u00eater et les cuisiner. Certains poissons ont meilleure r\u00e9putation que d&rsquo;autres. Les carnassiers &#8211; brochets, perches, truites, saumon ou sandre &#8211; sont recherch\u00e9s. On arrive \u00e0 en trouver sur les \u00e9tals des poissonniers &#8211; surtout du saumon et des truites. Ces gros poissons qui requi\u00e8rent une technique de p\u00eache particuli\u00e8re ne sont pas pr\u00e9sents dans toutes les rivi\u00e8res.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 12pt; font-family: tahoma, arial, helvetica, sans-serif; color: #db9812;\"><strong>Restent les autres \u00e0 la chair moins gouteuse :<\/strong> goujon, gardon, vandoise, barbeau, tanche, carpe. Ceci dit la carpe ne se laisse pas pi\u00e9ger facilement. Mieux vaut poss\u00e9der une barque et un mat\u00e9riel adapt\u00e9. Pour celui ou celle qui se contente d&rsquo;une simple canne et d&rsquo;un hame\u00e7on standard n\u00b0 12\u00a0 &#8211; mieux vaut s&rsquo;abstenir.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 12pt; font-family: tahoma, arial, helvetica, sans-serif; color: #db9812;\"><strong>Ces fritures<\/strong> consid\u00e9r\u00e9es comme un bas de gamme se m\u00e9ritent. Bas de gamme ? pas vraiment qui sait les cuisiner. Ces petits poissons se laissent parfois d\u00e9sirer. Certains jours, quels que soient les app\u00e2ts, rien ne mord. Et d&rsquo;autres fois les petits poissons &#8211; vairons ou goujons &#8211; se laissent tenter. Il en faut bien une vingtaine &#8211; sinon on les remet \u00e0 la rivi\u00e8re &#8211; pour faire un plat pour deux personnes. Frits \u00e0 la po\u00eale, c&rsquo;est un vrai r\u00e9gal. \u00c7a croustille et la chair blanche fond sous la langue.<\/span><\/p>\n<h3 style=\"text-align: center;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\"><strong><span style=\"color: #db9812;\">Mauvaise r\u00e9putation<\/span><\/strong><\/span><\/h3>\n<p style=\"text-align: justify;\"><span style=\"color: #db9812; font-size: 12pt; font-family: tahoma, arial, helvetica, sans-serif;\"><strong>Qu&rsquo;en est-il du barbeau si majestueux ?<\/strong> Ce poisson, tout comme le cabot,\u00a0 a mauvaise r\u00e9putation : on lui reproche d&rsquo;avoir une chair fade et d&rsquo;\u00eatre bourr\u00e9 d&rsquo;ar\u00eates. Rassembl\u00e9s en bancs, les barbeaux se plaisent \u00e0 paresser sur des lits de sable ensoleill\u00e9s. Ils farfouillent, se tournent. D\u00e8s qu&rsquo;un danger les menace, ils s&rsquo;\u00e9loignent ou d\u00e9daignent le vers qui pendouille juste devant leurs yeux. Ils font r\u00eaver !<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #db9812; font-size: 12pt; font-family: tahoma, arial, helvetica, sans-serif;\"><strong>L&rsquo;attraper rel\u00e8ve de la chance.<\/strong> Celle-ci sourit quelquefois comme en ce jour de septembre. L&rsquo;\u00e9t\u00e9 avait \u00e9t\u00e9 pluvieux. La rivi\u00e8re n&rsquo;\u00e9tait pas \u00e0 son plus bas niveau. Les plaisanciers avaient disparu. Certains jours, les cano\u00ebs se suivent sans discontinuer. Cela devient une plaie : pour la faune martyris\u00e9e, pour ceux qui appr\u00e9cient le calme. La rivi\u00e8re ressemble \u00e0 une auto-route : entre les cano\u00ebs qui se suivent, les cris de leurs passagers incapables d&rsquo;appr\u00e9cier la nature et les coups de rame maladroits ou le cano\u00eb s&rsquo;\u00e9choue sur un lit de gravier, bref sans parler de ceux qui s&rsquo;insultent ou\u00a0 ceux qui se mettent \u00e0 pourchasser une pauvre cane col-vert qui prom\u00e8ne ses petits. Un vrai d\u00e9sastre &#8211; il vaut mieux rester chez soi &#8211; et l&rsquo;on ose parler de tourisme nature !<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #db9812; font-size: 12pt; font-family: tahoma, arial, helvetica, sans-serif;\"><strong>La journ\u00e9e \u00e9tait cl\u00e9mente.<\/strong> Pourquoi ne pas aller p\u00eacher tout en appr\u00e9ciant le calme de la rivi\u00e8re, les reflets des arbres ou de la falaise gr\u00e2ce aux rayons de soleil ? Quel beau mirage et le temps se suspend, laisse place \u00e0\u00a0 un moment paisible au rythme de l&rsquo;onde fluctuante impr\u00e9gn\u00e9e des parfums de fin d&rsquo;\u00e9t\u00e9.<\/span><\/p>\n<h3 style=\"text-align: center;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\"><strong><span style=\"color: #db9812;\">Non ! ? c&rsquo;est un barbeau<\/span><\/strong><\/span><\/h3>\n<p style=\"text-align: justify;\"><span style=\"color: #db9812; font-size: 12pt; font-family: tahoma, arial, helvetica, sans-serif;\"><strong>Le flotteur s&rsquo;enfonce<\/strong>, plonge, s&rsquo;\u00e9loigne. Le bout de la ligne plie. Un poisson a mordu. Le ramener, sans l&rsquo;effrayer sinon il saura se d\u00e9gager. Il a de la ressource et \u00e0 la moindre secousse rompra le fil qui le retient. Cela s&rsquo;est produit plusieurs fois. Il tire, moins virulent, il commence \u00e0 se fatiguer. La rivi\u00e8re qui coule plusieurs m\u00e8tres en dessous du talus ne permet pas de le remonter sans casser. Il faut se servir de l&rsquo;\u00e9puisette pour l&rsquo;attraper alors qu&rsquo;il se laisse aller au gr\u00e9 de l&rsquo;eau. C&rsquo;est un coup de bol, une chance. Le voici prisonnier du filet. Il ne se d\u00e9bat plus.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #db9812; font-size: 12pt; font-family: tahoma, arial, helvetica, sans-serif;\"><strong>L&rsquo;on pourrait le rel\u00e2cher<\/strong> mais les barbeaux pullulent. Alors en prendre un ne pr\u00eate gu\u00e8re \u00e0 cons\u00e9quence et puis cela sera agr\u00e9able de cuisiner un si beau poisson &#8211; il mesure bien soixante centim\u00e8tres de long et p\u00e8se un kilo six cent. Mais comment lui donner de la saveur ? Comment ne pas \u00eatre d\u00e9courag\u00e9 : il a tant d&rsquo;ar\u00eates ? Ne vaudrait-il pas mieux le blanchir et le donner aux poules ? Elles adorent le poisson.<\/span><\/p>\n<p><span style=\"color: #db9812; font-size: 12pt; font-family: tahoma, arial, helvetica, sans-serif;\"><strong>La curiosit\u00e9 l&#8217;emporte.<\/strong> Dans certains pays du nord, sa chair est appr\u00e9ci\u00e9e. En le farcissant &#8211; avec de la chair de gardons &#8211; et en le relevant avec une chermoula comme le <a style=\"color: #db9812;\" href=\"https:\/\/www.pavillonfrance.fr\/recettes-astuces-du-large\/recettes-du-large\/mulet-sauce-chermoula-marocaine\"><span style=\"color: #1b6da8;\">mulet<\/span><\/a>, cela se tente. En effet, le r\u00e9sultat n&rsquo;est pas d\u00e9cevant. Il y a bien les ar\u00eates &#8211; cependant elles sont faciles \u00e0 rep\u00e9rer &#8211; il suffit d&rsquo;\u00eatre attentifs. Ses filets sont beaux et faciles \u00e0 d\u00e9piauter.
